Best wood fire pizza ever had. The dough is perfectly balanced. The sauce is not too sweet or acidic. The right amount of mozzarella, and topping on each pizza.Finished my meal off with Blueberry basil ice cream which was an incredible dessert. Worth the drive.

We arrived at 2:30 on a Thursday and were first in line. By 3:00 when it opened there were close to 20 people in line. We ordered 3 half-and-half pizzas so we could share and try all the toppings. We tried the House Pie, Roasted Vegetable, Mixed Mushroom, Fennel and Sausage, Soppressata, and Pesto. All were good. I liked the House Pie and the Fennel and Sausage best. I would not drive a long ways out of my way to go here but if I was passing through I would be glad to eat here again.

Amazing! I have wanted to go here for a long time and finally had the chance. I got the block wedge salad, the salami pizza and the house-made sausage and fennel pizza. Everything was spectacular. I got there about 20 minutes before they opened because I wasn't sure what to expect. I'm glad I did because by the time the doors opened there were about 30 people lined up. I got my food about ten minutes after I ordered and everyone I interacted with was super nice and enthusiastic about their food. If you are anywhere near Wilkeson between Thursday and Sunday, definitely stop here.

My husband read an article back in 2021 about this being one of the best pizza places in Washington state we finally made time to go and have dinner there tonight Saturday the 19th of November and All we can say is besides the friendliness of the staff the pizza was incredible. Ice cream amazing. Bread with dip heck ya .They did not disappoint. You must take a drive and taste the pizza. Get there reasonable the line never decreases in size until they run out of DoughThank you MOM for the laughs and making our first experience GREAT . We will be back for sure

I've been in Wilkeson previously, but had not visited Carlson Block. After reading an article on "Only in Our State," which says their pizza is the best in Washington, I decided to give it a try.Overall, the pizza is just ok. I've had better at many other places. My samples included cheese and the sausage and fennel. The cheese pizza was pretty basic and tasted like cheese pizza you'd get at any other wood fired pizza place (think Mod Pizza). The sausage and fennel was different as it has no red sauce. Sausage was flavorful, but I could have used my fennel. I added mushrooms which added a nice additional texture dimension.Service is kind of non-existent. You order at the counter and then try to find a seat. Seating is very limited, but fortunately there is a soda shop next door that lets you bring your pie and eat. We liked the soda shop way more at it had a really nice atmosphere, vibe, and even live music. In hindsight, we could have skipped Carlson Block entirely and had a good time at the soda shop. (Simple Goodness)Additionally, Carlson Block doesn't open until 3pm which makes visiting awkward. I would go again if I were in the area, but otherwise I'm not sure it's worth the trek from Seattle.

The Carlson Block is unique. The building is very old with the original leaded glass windows and it has been beautifully restored. I had the sausage and kale dip as well as the margarita pizza. The dip was good, the flavor of the sausage came through just enough. The star of the dish was definitely the flat bread it came with. It was wonderfully seasoned, had an excellent mouth feel and was just a teeny bit tangy. Just enough to really make your mouth water. When I had my first bite of the pizza I had to close my eyes and really devote all my senses to appreciating all the flavors I was experiencing. The sweetness of the sauce combined with the creamy saltiness of the fresh mozzarella topped off with the herbaceous basil and the underlying subtle tang of that amazing crust was a new and amazing taste sensation I'm glad I had. Just make sure to get there early and consider it an adventure. When they run out of dough that's it for the day. It might be worth sticking around for a salad and a drink just to enjoy the atmosphere of the place even if they are out, though. The staff are genuinely kind and the smell of the place is delightful. Everything about The Carlson Block is authentic.

We ordered two mouthwatering creations that left us thoroughly impressed. The Brussels sprouts and bacon pizza was an intriguing combination, with the smoky bacon enhancing the roasted Brussels sprouts in a delightful way. It was a truly unique and enjoyable taste.And then there was the soppressata pizza, which blew us away with its bold flavors! The spiciness of the soppressata, combined with the richness of the cheese and tomato sauce, made each bite an absolute pleasure.The craftsmanship and attention to detail put into these pizzas were evident, and it made for a memorable dining experience. Carlson Block Pizza certainly knows how to create exceptional pizzas that cater to a variety of taste preferences.We left Carlson Block Pizza with full bellies and huge smiles, already looking forward to our next visit. If you're ever in Wilkeson, Washington, make sure to stop by this gem of a pizzeria. With their creative and delicious pizza offerings, along with their warm hospitality, they have undoubtedly earned a well-deserved five-star rating!

Absolutely worth the wait. We ordered about 4:30 on a beautiful Saturday evening and they sold out shortly after. Thank the heavens.The crust was a great mix of crispy, char, and pillowy. The house pizza was a great tomato pie with gear balance. The mushroom could used a little flakey salt, but was otherwise such a great white pie. Love the substance of the oyster mushrooms. Thank you for such a great food experience!

If you are looking for the best Neapolitan pizza around, The Carlson Block is the place to trek to. Since we are always searching for great pizza, we have had it on our "to visit" list for a while. We finally had time to make the detour to Wilkeson, WA on the way home from a road trip. The pizza is all about the dough, which has the amazing combination of stretchiness and some crunch from the blistered crust. We had a margherita pizza with pepperoni, a side Caesar salad, a house red wine, and a beer. Everything is served to-go so the pizza and salad came in boxes. While we had pretty high expectations for the pizza here after all of the hype, we both agreed that it truly was fantastic and worth the extra drive time. The sauce to cheese ratio was just right and the pepperoni was cupped with just a little char. The historic building creates a really cool atmosphere. So, we will definitely be back to visit when we can squeeze the added hour or so detour into our travel plans!

When we're anywhere near Puyallup, we always make our way over to Wilkerson for pizza at the Carlson Block. Like today, we could have taken I-90 home from Yakima to Seattle, but we decided to go through White Pass and take the long and scenic way home, adding about 2 hours to our trip, so that we could stop by the Carlson Block for dinner. Their pizzas are that good.

Wow. This truly IS the best pizza in WA. We read the article in Seattle Times months ago and put this on our list of places to visit. Fast forward to a beautiful sunny day today, and we drove from south of Seattle all the way to Wilkeson to try this pizza. We ordered the house special which was garlic oil, fresh mozzarella and basil. It was sublime. We highly recommend making this trip. You will not be disappointed!

This tea house and pizzeria located in the restored Carlson hotel in Wilkeson is a great place to stop for a slice of pizza after getting your fix of outdoor activities around the Carbon River. They offer delicious sourdough woodfired pizzas, a decent selection of beer, wine, and cider, as well as an extensive tea menu. The bacon and Brussels sprouts pizza was out of this world. The French onion soup was on point as well (even more satisfying after 4 hours hiking in the rain!). Very friendly and quick service as well.

Worth the 70 minute drive to Wilkeson from Seattle! We arrived 10 minutes before Carlson Block opened and were the second group in line waiting for them to open for the day as groups quickly queued up behind us. We tried the margarita (added Brussels sprouts), did a build-your-own with Pepperoni / Garlic / Onion and ordered a Pesto to go. Lovely service. Delightful, fresh flavored pizza. Delicious all around. Charming restaurant with simple, tasty pizza.

It's really difficult at times to describe how amazing a place is. Their pizzas are made with a delicious sourdough crust, fantastic ingredients, and a indescribable taste. Their Fennel and Sausage pizza is the most popular for good reason. I HIGHLY reccomend this place. Absolutely one of my favorites in Washington. Provides a safe, neat, and atmospheric environment to compliment an outstanding meal.

They only had two pieces of cheesecake left and we had requested for both of them to be held for us. By the time desert came around the waitress gave one of the pieces to another customer. The waitress also forgot to add the cheesecake to the bill. The waitress also made us share our small salad after we both asked for one. The salad was supposed to have a special dressing but instead they put olive oil on it, which was not in the description for the salad. The waitress said she would refill our water and came back several times without it. The pizza was really thin, so forks and knives, but pretty good.

We ordered the Brussel Sprouts & Bacon and the Soppressata (my fav of the two.) Both were delicious. The sourdough crust was amazing, such a good texture! Staff was friendly, and the pizza came out much quicker than we were told. We'll definitely be back!

Excellent restaurant - we were lured in by the cozy vibe and were pleasantly surprised by the quality of the service, food and atmosphere. They use a natural leavening process to make their pizza dough giving it a complex, slightly sour taste and perfectly crisp yet chewy texture. Super excited to see where this place, and the place next door, goes with its potential. Will definitely be back every time we head towards Rainier.

I’m so happy I found THE best pizzas in the PNW. Wonderful owner, excellent, super cute building, very clean and very well laid out restaurant. We stopped by here at 3:30 Friday afternoon. Wait time was 5’ and pizzas were BOMB. Better than what we have had in Naples, Florence, and Pisa, Italy. We live two hours away but will need to come back every couple of weeks for more of this YUMMM.

If you ever find yourself out exploring and you go through a town named Wilkeson,WA you have to stop for pizza and cheesecake here. You can taste the quality not only if ingredients but if the love and effort that's put in to the food they offer. Plus you get a cool feeling just being historical building.

We made the trek from Auburn to Wilkeson just to try the pizza and cheesecake, what a treat!Every thing was incredible. The sourdough pizza crust was light and airy, and paired nicely with the toppings. The salted caramel cheesecake was light and delicious.

Got there at 7:15pm,45 min before closing. We were greeting with "we're out of dough." I said you're out of dough? And the employee said "yes, we're out of dough and if you want our pizza you need to come sooner in the day." Wow, so snippy. Seeing as they have been named the best pizza in Washington state, I can understand that they ran out of dough, however, what I can't understand is the very poor attitude and lack of customer service. Clearly they were not rated on their service, or in this case, the lack thereof. She did explain that they only make so much dough and can't make more due to lack of storage. Okay, I can understand that, but again such a piss poor attitude. She took the low road when she could have simply apologized for being out of dough, KINDLY letting us know they run out of dough frequently and offering us a to go menu so we could at least see what they have. And even perhaps offered some incentive to come back a different day, afterall we did drive for an hour to get there for nothing. She didn't care about that either. Wish I could rate the pizza, but for tonight this highly praised restaurant only left a bad taste in my mouth.

Long line when we arrived. We put the order in at 5:06pm on a Saturday. It took over 2 HOURS for three pizzas!!Was it worth it for the wait? No. If the wait wasn't that long? Maybe a 4 then.... But we don't have any plans on going back. It's an Interesting idea with the sour dough crust, but not worth a 2 hour wait for food.They even messed up my order. House Pie with fennel and sausage. No fennel or sausage. They were able to make a new pie in less than 15 mins. And barely 5 pieces of sausage! How the heck did I wait 2 hours if you made a new one in 15mins?!?! I mean is your oven that small to cook one at a time or what?We ate at a picknic table across the street.House Pie w/ fennel and sausageMargarita pieOlive, bacon, sausage pie3 tarts6 drinks ( because we had to wait so long )101$ plus 10$ tip.
