Zero stars for Hilger meats. Took them a Buffalo to have it processed and can’t believe what I got back. I wanted bone in cuts for my steaks. They explained to me that they don’t cut bison like beef and it’s a lot of work to do so. After literally hours of back and forth about this I told them just cut it like an elk, backstrap steaks and the typical roasts and burger. Finally picked it up to find they did bone in steaks. They are 3/4”- paper thin and look like they were cut with a hatchet. Bits of bone in them and don’t even resemble proper cuts. This was a very expensive animal to have ruined. Luckily I am reminded every time I defrost a pack of steaks. Will NEVER use them again.

This is from Dean Dunlap, Anne's husband. I recently picked up my order of a 1/4 Beef that was processed at Hilger Meats. After slaughter it hung for 2 weeks(perfect) and then cut and wrapped. I can't express how perfect and the care in this process was. Wrapped twice with plastic and wrapped then with freezer paper and the meat is just perfect. They have the best beef jerky I ever tasted. That was in 1986 to 88 while stationed at Malmstrom AFB. Trying to get back there to get more.
