Delicious food ! They had smoked ribs, a top 5 burger of my life and hearty chili too! They have both meats to take home and prepare as well as lunch/dinner options. The staff was knowledgeable and friendly about what might have gluten in it as well. Definitely worth it to stop and try ! They also seem to have lunch specials that rotate and sounded delicious! Easy parking as well.

This place is awesome!!! They are very knowledgeable and informative if you ask. I tried an aged steak for the first time it was delicious!! They told me how to cook it, I just did simple salt and pepper. Also their beef brisket plate is a good serving very filling and smoky tasting.

I stopped in at this shop at 15 mins to close on a Saturday and appreciated the fact that they were still there and welcomed me in. The butcher recommended some pork steaks, Coppa steaks, and WOW!! SUPER AWESOME!! Best pork I have ever made at home and all I did was salt and pepper them. Pan cooked them up at his recommendation. Looking forward to the leftovers!! Great find! Thanks!

Very good meat selection. Try the goat cheeses. They also have brisket. Pulles pork sandwiches, combo platter and chili. They have expanded so there is more selections.

This is the place for best cheesesteak possible! 💥⚡️💫I went to school and Philadelphia, the home of "Pats ... the king of cheesesteaks."... I have to say the Waimea butcher shop, made it better!

Tl;dr The real deal. BUTCHER.I could tell by the pictures and reviews that this was going to be well worth the stop but it didn’t prepare me for the absolute meat heaven that the Wiamea butcher shop is.A whole animal butcher and sourced here on the big island. A local shop. Wygu, Red Angus, pork chops, fresh rashers of bacon, lamb shoulder steak, and even wild boar chops. All tempting.But then there is Nirvana in a cooler just to the side. Dry aged everything. 60-120 day dry aged. Um I confess I walked out with a 2 pound plus monster of an Angus Porterhouse aged a bit past sixty days.Haven’t even cooked it yet, still jonesing.The butcher was full service. He asked if I had cooked dry aged before I have, been a while but he still walked me through it to be sure I didn’t mess up a great experience. It was awesome service.They also have lots of stuff like they serve lunch! And truffle butter. And pate. And Bacon jam. Mostly Bacon. Put that on a slab of sourdough with a slice of butter. Wait. Yeah. Do.I live in the Midwest and we have butchers in fact we often just buy a cow and have it butchered. And it’s great good wonderful beef but they got something right here in Hawaii and it may be just the best butcher shop this side of the Missouri.

Local shop with fresh, local products that are incredibly delicious.Are there cheaper places? Sure, but these folks are local and support local, they care about quality. Fantastic butcher shop with great cuts of beef and harder to find things like bavette, beef ribs, pork shoulder (see photo)..all big island local and all whole animal broken down on site. Worth every penny!

These guys are great, friendly and very helpful staff. It was only our 2nd visit and 8 months since our prior one but they still recognized us. From that 1st visit onward I will always try to stop by at least once when on the big island. Awesome cuts of meat and great beef jerky we can't get enough of. The best.

Seriously good Texas BBQ made by a guy from—you guessed it—Texas. The butcher shop is legit too, tons of meats and probably any cut or animal you can dream of. Good charcuterie too. I would probably spend all my money here if I lived in Waimea.

We are visiting from Connecticut and wanted to get two good steaks to grill up at our air bnb. We were helped by someone who was extremely knowledgeable and aided us in making our selection! We got a sirloin and a 30 day aged t bone, both of which are some of if not the best steaks we’ve ever had! Highly recommend!

Ok, so I am a meataholic! And we are here in Mauna Lani resort for 3 weeks. Can’t find any good beef outside of Costco. So my wife and I drive up to the Waimea Butcher. They open at 10:00, and we arrived at 10:15. The door was locked, but after a minute or so a gentleman opened the door. We didn’t get a warm greeting. Their beef is local, and grass fed, so no prime/choice. They have a case with dry aged beef, which looked great. There was a small piece of rib, some tomahawk ribeyes, and quite a few porterhouse. The gentleman was not very helpful answering my questions, and I felt taken aback. Despite this, I had him cut me a 2” porterhouse. We also bought a chicken ($10/lb,). I asked if they would grind me 2 pounds of brisket/short rib. I got kind of a nasty no, only special grinds for 10+ pounds. So I took the ground beef in the case. I actually almost walked out when they refused to grind the beef for me. The above is the reason I did not give them 5 stars. The steak was absolutely delicious. The chicken as juicy and wonderful as any I have enjoyed in the past. And the burgers from the ground beef were amazing.Will definitely be going back for more. Hopefully they just had a bad day!

This place has the most amazing sausage I've ever had. They order their meat fresh as you can get it. Everything is grass fed as advertised. Everything is local. The guys that work here are true gentlemen. My favorite place in town hands down. Their brisket is seasoned to perfection and so tender. These guys truly mastered their craft.

Absolutely incredible! Everything here is amazing. The best kalua pork you will ever have. The brisket is a meat lovers manna from heaven. The friendliest staff, super helpful and absolute experts. Owner is amazing, and is always behind the counter helping out. True professionals with a real love for what they do. If you eat at one place in Waimea, eat here.

So much more than your basic butcher shop. Fine prime cuts of local beef, sausage, and premier aged ribeye. Look for their lunch menu of smoked meat plates and sandwiches. On-the bone-brisket plate was delicious. Reasonable prices. Take out only. If you're going to spend some time in Waimea, be sure to grab lunch or take home something special for the grill.

Great selection, cuts, probably the best in this area.3 stars due to their rules/service. Been going to butcher shops my entire life and was never charged for slicing up a large cut of meat. Upcharged me $2/lb for slicing up a $100 piece of meat. First time a butcher has ever done this in my experience.

At Thurston's lava tube, we met a guy who said to check them out. Worth the extra 45 minute drive. Beautiful meat, great sausage, great charcuterie. I wish I stocked up a little more. Great prices, too.

FINALLY! Simple well done meats that showcase the incredible local grass feed beef on the north end of the island. Combo smoked and grilled done to perfection. The quality of the meat shines so nicely that I almost feel like I know the names of the animals the meat came from lol. BONUS sides are equally well done, some of the best baked/chili beans and coleslaw ice had. If you wannaget your meat or grub on, this is a must when in the northern big island

Sad was looking forward when they were opening first experience order to sandwich at the butcher shop should have called it a baker shop all bread no meat. Two weeks ago ordered two steaks extra thick cut for BBQ$62. Never seen steak with the skin of the cow still on it almost a half inch thick. My kids and I couldn't even eat the meat too tough. My dogs are happy. Sad because we don't have much varieties in our town.

This is a much needed addition to the Hawaian culinary scene. This is well crafted local meat done by locals for locals. It is well worth the price to get an island product especially one from our island. Most of our locally raised meats go on an unfathomable journey to reach their final destination frozen and hardly the same product as when it left. Thank you Mills for allowing us to eat an amazing product that lives and prospers on our shores.

Love this place! Big Island raised meats, house made charcuterie, and local produce. They have little cards with best cooking practices so you can get the best steak each time :) You might get lucky and meet a rancher there as well!
