Been a very proud regular since Lauren opened. She serves coffee from my 2 favorite roasters in the region: Peregrine and Storyline. That alone gives her a 5-star rating. Then, I’m a freak for a good breakfast burrito, and as far as I’m concerned, it’s the best within an hour of me coming from down in Westcliffe. The size of a burrito is a criminally underrated factor. Lauren gets it 100% correct. It’s an absolute must-stop, for HUGE, delicious breakfast burritos and top-notch locally-roasted coffee.

Loved my time here. Wow. Fast, custom made, fresh, vegan, affordable and yummy food. Should I say more??? Eating healthy isn't easy to start with and doing on the road sucks at times with limited options. Guess what,The FlaminGo staff will keep you well. Stop by and check out their burritos and bowls!! Appreciated the convenience of stopping for a hot breakfast that we didn't have to wait for. Our breakfast burritos were huge, which was nice, though they had more potatoes than we preferred. Would rather buy a 6 or 7 dollar burrito that's half the size, and with a lower ratio of potatoes and more green chiles (for me) but they were still good! Also, my husband asked for no green chiles but his burrito still had green chiles on it. He didn't enjoy the spiciness but liked the flavor.

We paid $25 for 4 lbs of breakfast burrito (we got 2, one chorizo and one sausage). There was hardly any meat in either of our burritos, the eggs were all wet, half of the tortilla was hard as a rock which was better than the other half of the tortilla which was so soggy it stuck the paper and ripped off when we unwrapped it. The flavor was okay but mostly got the green chili flavor.Very disappointed

Sausage rolls were a hit - a tad dry but also a nice treat! The burrito was just OK. Not a fan of the frozen potatoes that were quite dry. If they changed potatoes it would be much more enjoyable!

We were in Colorado all the way from Michigan and happened upon this food truck. Hands down, the best breakfast burritos we’ve ever had! For $10, you can’t go wrong for the large, smorgasbord of a burrito they serve you. They were so good that we made a point to come back when we were in the area a few days later. Thanks for the great food ladies!

Stop here before skiing! Delicious veggie burrito! I stopped in today and the typical veggie burrito has an ingredient I’m allergic to and Lauren offered to make me a custom burrito. It was so good! Giant! So it was breakfast and lunch! Good coffee too. I’ll be a regular here.

Yessss!!!!! Definitely coming back here! I'm a major breakfast burrito lover, and I somehow hadn't tried the flamingo's yet, but it was the best I've had in memory, definitely the best in town! And the kicker is it's actually grab and go, i.e. truly a quick stop, perfect for mornings on the way to have fun, work, or whatever else, yet it's better quality (and just better recipe ideas) than you'll get with a half hour wait anywhere else in town!

Stopped in for a quick bite. Love the location easy in and easy out. I wanted a big flavorful burrito(not the thin ones at McDonalds!) And I got more than I bargained for! It was huge! Filled with delicious, bacon egg cheese and just plain goodness.Took some sausage bites for the road and was the perfect snack!This is owned and operated by local ladies, and they are so nice!Get there early they are hoppin!Lines are not quite as long as the ski slope, but you can definitely get a feel this is the local hotspot for a great breakfast on the go!

So delicious! We needed a road trip pit stop and it was perfect. We got the blueberry muffin, sausage rolls, and bacon breakfast burritos. All the food was delicious!Picnic table eating outside and port-a-potties (but they were clean)

Hard pass on the breakfast burrito. They are premade, which I normally don't mind, except for the fact that they put ingredients in the burrito not listed on the menu and sauce it ahead of time too.Burrito was listed to include: egg, cheese, potatoes, green chili, "chipotle cream sauce" and choice of meat. Well it's also loaded with black beans. The boiled beans with sauce just makes a giant squishy nasty mess.Flavor was awful and just tasted like breakfast stew in a soggy tortilla. One bite and I was done. Just drive into Salida and get a proper breakfast.

Best breakfast burrito I’ve ever had. And super friendly service! We got there right as it was closing but the workers were very welcoming and encouraged us to order anyway.
