We are locals and met with some friends for dinner at Eats. None of us had ever eaten here before so we were excited to give it a try. For this area it is a pretty high $$$ choice. The food was good portion size average, not sure it demands the price but the atmosphere made up the difference. We were actually seated in the bar area not in the main dinning area. We had finished out meal and had paid the bill but one person in our party had not finished their wine so we were just visiting and finishing our cocktails. And the hostess came over and actually told us to leave! That they were “glad we had enjoyed out dinner but …. It was time for us to go they needed our table. Amazing! Our bill was $250 and they told us it was time for us to go they needed the table. I am still trying to wrap my head around that. Wow. WE HAVE EATEN AT A LOT OF HIGH END RESTAURANTS AND NEVER HAVE WE BEEN TOLD THAT “YOUR TIME iS UP.”THAT RUINED THE WHOLE EXPERIENCE FOR US. WONT. NOT SURE WE WILL EVER GO BACK

Absolutely disgusted with the owner and chef CUSSING in front of my child and my sister’s child because I wanted my daughter’s food replaced. Told us we were being rude for asking to sit together, but she didn’t accommodate our 6 top when a table cleared, refusing to let us sit together. Did not treat us like guests in the town, she treated us like a nuisance for wanting to sit with our whole group and when my daughter didn’t like her food she refused to serve her something else and then came over and made both the kids cry after calling the cops for telling her I wasn’t going to pay for the first dish that my daughter didn’t eat. Proceeded to scream and say the F bomb multiple times while our kids were crying. As a business owner I am appalled. She told me she didn’t care about me being a business owner and called me trash as the whole restaurant stared.I am BAFFLED and have NEVER experienced such horrible service from an OWNER. Absolutely disgusting.

If you haven't experienced the magic of Molly's food, Jeff's cocktails or the ambiance of Eat Bistro, don't wait. Go now. You won't be disappointed. Besides the amazing food and cocktails, the owners have not missed a beat with ambiance, making it very inviting and cozy. It's the little touches that make an evening out, special. The overhead lighting is pleasing to the eyes, the restrooms are spotless and the decor is casual but elegant. The staff and owners go above and beyond to make our experience exceptional. When we dine out and pay good money, we expect the best with service, food, presentation and ambiance. Eat Bistro nails it, EVERY TIME. New Castle is lucky to have you, Guys! We LOVE YOU! This is such an awesome little hidden gem. The staff are super nice and the food is outstanding. I was recommended the Kosta and it is absolutely amazing. The beef was cooked perfect and the potatoes were amazing. I also had the crab rangoon, which did seem like it could use more filling and was pretty inconsistent between them, but the flavor was still good. Overall, I highly recommend stopping in here. It will blow you away with how good it is. I never expected a place like this in New Castle.

First time at Newcastle CO - locals fave & culinary delight. Only a stranger once because staff will take care of you personally. Greatest food on west slope. Try the Molly Christo named after their great cook and owner. Desserts were homemade, rich, and decadent too.

What a great experience and worth the short drive from Glenwood Springs. This place is on par with any big city restaurant. The food is great, warm ambience and service is perfect with the right amount of attention. The chef even created something off menu to meet our vegetarian requests

We celebrated my birthday at EAT Bistro and Drinks and it did not disappoint!! This was one of the best meals I have ever had! We had drinks, appetizers, entrees and desserts! Every single item was delicious! The staff were great. The atmosphere was fun. This is truly a hidden gem in the cute little town of New Castle! We can't wait to go back!!

The food and drinks were great. My 3 stars comes from the fact that our waitress thought she made an error after we split the bill; however, they called me at home TWICE about it (they had my number from the reservation.) They claimed one of the cards didn't run. Us and the party we dined with both had pending charges on our bank account. They gave each card signer the receipt from one card, so it couldn't close in their system. I even had to talk to the chef at like 9:30 on a Friday night. Felt like they were accusing us of stealing when it was their error. So unprofessional and annoying, no food is worth that. We won't be back.

Wow! A little gem one would miss if they weren't looking for it based upon the recommendation of another heard in a soaking pool down the road. Highly recommend a stop here if you want food and drink that you won't find anywhere else. The chef and her husband are awesome hosts and the bartender made sure food and drink were always cared for. This is how staff should care for their customers on the post pandemic world! The Osso Buco is melt in your mouth fall off the bone awesome. The flavor profile just made the taste buds happy! It was recommended and I can see why. For the place you won't forget, you gotta come here for it.

Flavour forward. Alex our server treated us cackaling girls like royalty. Atmosphere was warm and inviting. Everyone was happy. We did not want for anything. This is the way fine dining should always be. Thanks EAT for a wonderful evening with my friends!

I just want to truly say WOW! I love this restaurant. I wish I lived closer so I can always eat there. The food was amazing, an experience that I will never forget. The atmosphere was so relaxed and the decorations were on point. The staff was so nice and caring. I assure you that you will not regret eating here.

Everything about this place is great. The food is spectacularly executed, as are the drinks, and the staff is top-notch - I've not had a better dinner experience outside of one restaurant in Lyon, France. And this is in little ol' New Castle, so the drive from Denver is much more convenient than the flight to Europe. And the parking is way easier.We (party of 4) had the coconut shrip, pork belly bao, and the reuben eggrolls to start, with the party enjoying beer, wine, and the Hot Madame. If I were to do it again, I'd probably skip the eggrolls and go for the shrimp and grits (diner's remorse?), not because I disliked the eggrolls, but because I really wanted to try both.The bread and butter placed on the table were both wonderful and seemed very fresh.Entrees were the pork osso bucco (perfect), the curry-encrusted shrimp (spicy, but not too spicy), the baked cod (lemony, but there's still good cod flavor), and the wild-caught sea scallops. The latter is difficult to do this far inland, as scallops can be pretty delicate and can be yucky if not fresh. They're not difficult to cook correctly, but they're easy to do incorrectly, if that makes sense. These were absolutely as nicely done as the best I've had on the East Coast. One of our number also added on a soup du jour that she raved about.The staff are 100% rock stars. We were made to feel very much at home, and they were extremely patient with our many questions. They have their own "Manhattan Project", which is 10 variations of the classic drink developed whilst the world was shut down for Covid. This is a solid example of what happens when winners don't rest on their laurels. Of course, we had lots of questions about the Manhattans, and they were great about taking the time to talk about the whole thing. And wiping down the table between courses is not something you see done everywhere - kudos for that!Desserts rotate with seasons and availability. The pear tart - there were no more apple tarts available - is my new favorite. Try the Irish Moonlight for a dessert drink, too.The whole evening was worth every penny. We'll be back.

What a find! The restaurant has an inviting, warm feel. The service was amazing and the food was out of this world. It’s clear the preparation and love that goes into every detail of the food and drink. Top notch staff! Clearly well run!Vegetarian options: I felt their were plenty of vegetarian options to choose from! The lasagna was fabulous!Dietary restrictions: Vegetarian, vegan and gluten free options.Parking: Plenty of parking available on the street.

Exceptional service, as well as food and drinks!!! You can't go wrong with anything you order to drink or eat. The flavors will absolutely wake your taste buds up. Atmosphere is so lovely and elegant. I love the owners so much!! My favorite spot in the valley!!!

We not only eat here when time permits, but send all our cabin guests here, Molly is spot on. Reliable well trained staff, very attentive and knowledgeable, like this format as opposed to help yourself at first opening, TOTALLY missed the food and don't know where the baker kids went? Don't care... this is incredible food that only a complete foodie would appreciate with maybe 24 seats? GO and eat and then go, hmmmm ... that was fantastic and I will return.. thanks to molly mary and mom... and joe and kitchen and well.... everybody. NEVER a bad experience??? Utmost care. WORTH EVERY DIME.. come on new castle, spend it!!! SUPPORT LOCAL!!!!!!!!!!!!!!!

Absolutely incredible! I had the almond covered trout (which was amazing) and the cheesecake (which was out of this world; legit the best cheesecake I have ever eaten). The service is top notch, and since it's in New Castle instead of Glenwood the wait isn't long either. New favorite place!

We had dinner here to celebrate Christmas, we've heard wonderful things about this restaurant, and they were all correct. What a treat to have such a wonderful restaurant in New Castle. It is nice not having to drive up-valley to enjoy such a great restaurant. The food was exceptional, all homemade, creative, and delicious! The service was excellent, Sabrina was a true delight! All the staff were friendly and polite, the atmosphere is cozy and comfortable. We will definitely return here and recommend this place to all our friends. Thank you to Molly and all the staff for running such a top notch establishment!

I just had to write a review, although I don’t want the world to know that I found this gem of a restaurant! I want to keep it all to myself!! Talk about gourmet food! Talk about customer service! Talk about a cozy and warm little atmosphere! Eat Bistro is mine and my husbands new “spot!” We’ve been looking for a “spot” for years in this little valley and we are so happy to have finally have found it!

We spent our 48 wedding anniversary at this fairly new restaurant in New Castle. 1st of all we felt very welcomed, and surprised at not only their menu choices, but how reasonable they were. I had a very delicious blacken red snapper in a fabulous lemon cream sauce for $20, and my wife had the daily special, 2 huge lamb loin chops served with a butter that was prepared with lemon zest and mint. Absolutely delicious.

(This is a rating based on service) This bistro is a gem in a quaint town in CO. It would be totally outstanding if it was not for their service. Straight up my food and service was great. I am advocating on behalf of a situation I observed. If any one eating at your overpriced bistro says they feel sick due to a food allergy, do not condescend or be defensive in any way. I never once heard any one ask the guest if they needed a paramedic/call to 911, at no time was it even offered to comp at least the item that made them sick. Instead, the bar keep implied it coulda have been the beer, the staff came out to negate any harmful ingredients. One member happened to be a nursing student and sweared it was not the food that made him feel ill, they even gave recommendations on what to do to identify their allergies in the future (Not how a real nurse would respond). I am in progress of my P.H. D., still does not make a doctor. It is a human thing to be caring and assist in any way especially with the pandemic we have gone through. What happened to the days of the customer is always right? I worked in customer service since I was 19 and I woulda been fired on the spot by my manager or by the owner if they heard my responses. Do better EAT Bistro your prices say you should.
