Absolutely stunning saloon and restaurant. Plenty of bourbon choices to get your appetite going. The decor is amazing. This is truly a hidden gem that you don’t want to miss. The food was amazing. The burger was one of the best that I’ve had lately. Super juicy meat and full of great flavors. My wife’s beet salad was delicious as well. The smoked Gouda sliders were great as well. The pork green chili is something from another planet! Service was top notch even with one bartender/server there. I can’t remember her name but she was awesome. Highly recommend.Parking: There was plenty of public parking in lot across the street.

Went to 511 Rose during our snowboarding trip. Although the restaurant didn't have our original selection, the food to ordered was pretty good. I especially liked the decorations in this place, so many interesting and fun things to look at while you enjoy your meal!

This was a nice surprise to walk in to a small restaurant that had great food and outstanding service. Arrived around 3pm and Cook went out of his way to prepare prime rib even though they usually don’t start cooking until 5 pm. The food was outstanding and enjoyed every bite and the dessert tasted so good! Thanks 511 Rose 🌹 for such a wonderful experience!

I was visiting from Texas and I most certainly recommend this place to eat. Had just got off the Georgetown train ride and came to this place to eat. The atmosphere of this place is amazing, the staff were very very friendly. Our hostess was so sweet, I wish I got her name but she was a nice lady. Don’t get me started on food, absolutely amazing. Had live music and the guy was singing country music. Such a highlight of the night. 100/10

Oh my. This was the best dining experience I’ve had in a while. Our party of 7 went here on a whim and it was an A++ experience from start to finish. Excellent cockatils, delicious food. And the STAFF. Nikki was incredible! And the owner, Ron, was the absolute man. We ended our meal with a shot ski of Ron’s homemade cinnamon shots! Can’t recommend the place enough. We will be back any time we’re in Georgetown!

We just got dinner here tonight on a quiet Sunday. The atmosphere was great, it’s such a cool spot. Also, the food was SO good!! We got the ravioli and bruschetta and thoroughly enjoyed it all. Ron, the owner, was so lovely. He told us the story of getting and building the place. He was so engaging and kind and we really appreciated how much he welcomed us. We will definitely be coming back, and this will be our go-to in Georgetown!! Thanks all of the staff who made it such a great night. Don’t skip this place!

This place is amazing and historic. Great food, drinks and the atmosphere is very good. The service is amazing and I highly recommend coming here. I had the Mac n cheese Brisket and it was exactly how a brisket should be and the Mac n cheese was delicious with goat cheese. Thank you all.

Coming back from Sky Resort at Loveland we stop at this absolutely great place to visit in George Town. Excellent service and ambience, tasty food and good drinks!!!40/person -includes coffee, dessert, alcohol and exquisite plate-. A place to comeback!!!!

An exceptional hidden gem. Live music, funky decor, and the pumpkin ravioli drool worthy! Margarita, fantastic!! The owner as well was a delight. He explained the binoculars at the front are used for viewing bighorn at the hills across the way. Personal service... stories, the end to a delightful day. ❤️ Thank you.

After a long hike in the mountains up at Guanella Pass Trailhead, my girlfriend and I decided to stop in at Georgetown for dinner. Not a lot open on a Sunday (5/28/2023), but 511 Rose seemed like a hit spot. As soon as we walked in, we were greeted with a great smile and welcomed vibe. The place is so beautiful inside! Music that was thought coming from a speaker in the ceiling, turned out to be a live performance from a balcony that was in far corner. Small little place but that’s what I prefer. The owner was very nice, didn’t catch his name though. Our waitress Makayla, was very prompt on our order and had a chipper mood. We will be visiting again the next time we go for hikes up in the mountains on the way through.

What a hidden gem, right off the Georgetown exit in historic Georgetown’s downtown. We needed a break from traffic on our weekend drive home from the ski resorts, and found this spectacular bar and restaurant with incredible ambiance, a live guitarist and singer, and delicious cocktails and cuisine. We ordered the cold-smoked salmon which they smoke in-house over the course of 4 days, and two Buffalo Trace old fashioned cocktails. We enjoyed meeting the owner and his daughter and will definitely be back to support this newly-launched family-owned establishment :)

What a great, unique, local spot! It was definitely worth the wait in line that was out the door and down the block! We had the reuben and the 511 mac and cheese. Reuben was excellent, loved the marbled rye bread and the beef pastrami was super fresh and tender, not dry at all. The french fries were super good too! You could tell that they were fresh cut and not frozen. The mac and cheese was super tasty, love that it had a variety of cheese including goat and gorgonzola. My husband wished that it was broiled in the oven but I loved just as it was. The atmosphere was cozy and funky and took us back in time to a local cowboy hang out. We look forward to coming back and trying the highly reviewed pumpkin ravioli! If we had room we would have added that to our lunch! Thank you for a very fun, local experience! If you ever see a line out the door it's definitely worth it!

511 Rose was a really nice place for a quick meal after our trip on the holiday Train. Atmosphere was warm and the Studebaker bar was quite the conversation piece as was the memorabilia decor. The Maple Bourbon Brussel Sprouts were an amazing appetizer. We loved them! Food was excellent and reasonably priced.Our server, P.J. was friendly and an excellent host. This is a family-friendly place in Georgetown!

Great food and service. For lunch I had the Caprese sandwich and it's delicious and the Smoked salmon is out of this world! Also check out the bourbon selection and have the 511 Old Fashioned, the well brand is Buffalo Trace!I went back and had the French toast for Brunch on Sunday. It's Tops! This place is a great addition to a town so many of us love.Cheers!

Oh my. I didn’t expect this in a tourist town the size of Georgetown. No disrespect, Georgetown, love you. Seriously delicious food. Great server, too. I had the pumpkin ravioli — touch of apple for sweetness, light sprinkle blue cheese for bite — and he had the hanger steak. Amazing sauce and au gratin potatoes accompanied his meal. The Breckinridge spiced bourbon was perfect for this early fall afternoon. Bring on the dessert menu!

Great food, really fun and relaxed atmosphere. Had the green chili and shared the Reuben tonight, both excellent. The barbecue plate and the smoked salmon app are very good too. Local Cabin Creek Brewing amber lager paired great with the Reuben, and the nightly live entertainment by Rob Solomon really adds to the experience!
